South German-Style Hefeweizen/Hefeweissbier - Extract

Recipe Description

American Brewmaster hefeweizen kit.

  • Batch Size: 5 gal (18.9 L)
  • Boil Size: 2.5 gal (9.5 L)
  • Boil Time: 60 mins


  • Grains/Fermentables
  • 6.6 lbs (2.99 kg) Wheat Malt Extract (20 °L)
  • Hops
  • 1 oz (28.35 g) Hallertauer Pellet 4.3% AA (Boil - 60 mins)
  • Yeast
  • Safbrew WB-06 (Dry)


Bring 2.5 gallons of water to 155 F. Add 3.3 lbs of malt extract and bring to a boil. Add bittering hops and boil for 45 minutes. Turn off heat and then add remaining malt extract and boil for an additional 15 minutes. Cool the wort to 80 F using ice bath or wort chiller.

Rehydrate the yeast for 20 minutes in 0.5 cups of 90F water. Add 2.5 gallons of cold water to fermentor. Colder water in fermenter means less cooling is needed for wort. Pour wort in to fermenter and add yeast. Stir to aerate and mix wort with water. Top off to 5 gallon mark. Cover and let ferment for 3-7 days.

Boil 8 oz of water with 5 oz of priming sugar for 10 minutes. Stir until dissolved. Add mixture to bottling bucket. Siphon beer from fermentor to bottling bucket while avoiding splashing.

Hold in primary fermentor for 7 days at 68 °F (20 °C).

Allow to carbonate and age for 10 days at 65 °F (18 °C).
