Attempt at a Delirium Tremens clone recipe. Recipe melded from several found recipes, one of which claims to be directly from Huyghe.

  • 11.75 lbs (5.33 kg) Belgian Pilsner 2-Row (2 °L)
  • 7 oz (198.45 g) Munich Malt (9 °L)
  • 5 oz (141.75 g) Belgian Biscuit Malt (23.75 °L)
  • 3 oz (85.05 g) Belgian Aromatic (22.5 °L)
  • After Boil
  • 1.5 lbs (0.68 kg) Beet Sugar (0 °L)
  • 1 lbs (0.45 kg) Invert Sugar (0 °L)
  • Hops
  • 1.5 oz (42.52 g) Styrian Goldings Pellet 3.8% AA (Boil - 60 mins)
  • 0.25 oz (7.09 g) Styrian Goldings Pellet 3.8% AA (Boil - 20 mins)
  • 0.25 oz (7.09 g) Saaz (Czech) Pellet 3% AA (Boil - 20 mins)
  • 0.25 oz (7.09 g) Styrian Goldings Pellet 3.8% AA (Boil - 3 mins)
  • 0.25 oz (7.09 g) Saaz (Czech) Pellet 3% AA (Boil - 3 mins)

  • 10 g (0.35 oz) Coriander Seed (Boil - 10 mins)
  • 30 g (1.06 oz) Ground Ginger (Boil - 10 mins)

  • Belgian Golden Ale Yeast (Whitelabs WLP570) (Liquid)
  • Safale S-04 (Dry)

Directions

Infusion Step: Mash at 144 °F (62 °C) for 45 minutes.

Step mash: 125 F for 10 min, 144 F for 45 min, 158 F for 30 min, 172 F mash out. Reserve simple sugars for dosage to primary after initial peak fermentation. Boil simple sugars in a small amount of water before adding to primary ferm. Invert sugar used was Lyle's Golden Syrup.

Hold in primary fermentor for 7 days at 72 °F (22 °C).

Transfer to secondary fermentor for 40 days at 68 °F (20 °C).

Allow to carbonate and age for 14 days at 70 °F (21 °C).
