  • 7.5 lbs (3.4 kg) 2-Row Malt (2 °L)
  • 7.5 lbs (3.4 kg) 6-Row Malt (2 °L)
  • 0.5 lbs (0.23 kg) Crystal 40 (40 °L)
  • 0.5 lbs (0.23 kg) White Wheat (2 °L)
  • 2.5 lbs (1.13 kg) Table Sugar (Sucrose) (1 °L)
  • Hops
  • 1 oz (28.35 g) simcoe Pellet 13.3% AA (Boil - 90 mins)
  • 1 oz (28.35 g) Chinook Pellet 12% AA (Boil - 90 mins)
  • 1 oz (28.35 g) Warrior Pellet 14.2% AA (Boil - 90 mins)
  • 1 oz (28.35 g) Columbus Pellet 17.3% AA (Boil - 30 mins)
  • 1 oz (28.35 g) Centennial Pellet 9.7% AA (Boil - 0 mins)
  • 1 oz (28.35 g) simcoe Pellet 13.3% AA (Boil - 0 mins)
  • 1 oz (28.35 g) Centennial Pellet 9.7% AA (Dry Hop)
  • 1 oz (28.35 g) simcoe Pellet 13.3% AA (Dry Hop)
  • Yeast
  • Safale US-05 (Dry)

Directions

Mash (Infusion): Mash at 152 °F (67 °C) with 6 gal (22.71 L) of water for 60 minutes.

Recommended Sparge: 170 °F (77 °C)

Mash all grains with 6 gallons water for 60 minutes. Strike at 165°F. Temperature settled at 152°F after dough-in. Vorlauf. Lauter. Collected 4 gallons of 1st runnings at 1.072. Sparged with 3.75 gallons of 170°F water. Vorlauf. Lauter. Collect 3.75 gallons at 1.033. Boil 7.75 gallons at 1.068 (after adding sugar; 1.051 prior.) Boil with 90 minutes with hops as directed. Chill to 65°F; rack to fermenter; pitch yeast (22 grams). Ferment 4.25 gallons wort at 1.089. (Lost quite a bit due to hop residue; was hoping for 5.5 gallons fermention volume!) Racked to secondary with dry hops on 6/21/2020.

Hold in primary fermentor for 14 days at 70 °F (21 °C).

Transfer to secondary fermentor for 7 days at 70 °F (21 °C).

Allow to carbonate and age for 14 days at 70 °F (21 °C).
