Clone of AHA's version of Sierra Nevada's recipe scaled down to 3.5 gallons.

Ingredients

  • Grains/Fermentables
  • 8 lbs (3.63 kg) 2-Row Malt (2 °L)
  • 1 lbs (0.45 kg) Crystal 60 (60 °L)
  • Hops
  • 0.7 oz (19.84 g) Centennial Pellet 10.5% AA (Boil - 80 mins)
  • 0.7 oz (19.84 g) Cascade Pellet 6% AA (Boil - 15 mins)
  • 0.7 oz (19.84 g) Centennial Pellet 10.5% AA (Boil - 15 mins)
  • 0.35 oz (9.92 g) Cascade Pellet 6% AA (Boil - 0 mins)
  • 0.35 oz (9.92 g) Centennial Pellet 10.5% AA (Boil - 0 mins)
  • 0.35 oz (9.92 g) Cascade Pellet 6% AA (Dry Hop)
  • 0.35 oz (9.92 g) Centennial Pellet 10.5% AA (Dry Hop)
  • Yeast
  • Safale US-05 (Dry)

Directions

Infusion (Infusion): Mash at 152 °F (67 °C) with 3.5 gal (13.25 L) of water for 60 minutes.

Recommended Sparge: 170 °F (77 °C)

Mash with 3.5 gallons water, strike at 165°F. Vorlauf, lauter and collect 2.5 gallons. Sparge with 2.5 gallons water at 170°F. Vorlauf, lauter, and collect 2.5 gallons. Combine runnings and collect 5 gallons. Boil with hops 90 minutes with hops as scheduled. At flameout stir wort to cool slightly and add 0 minute (whirlpool) hops. Let rest 20 minutes, remove hops and chill to pitch temperature.

Hold in primary fermentor for 7 days at 65 °F (18 °C).

Transfer to secondary fermentor for 5 days at 65 °F (18 °C).

Allow to carbonate and age for 14 days at 65 °F (18 °C).
