Attempt at an extract Delirium Tremens clone.

Ingredients

  • Grains/Fermentables
  • 3 lbs (1.36 kg) Pilsen Dry Malt Extract (2 °L)
  • 1 lbs (0.45 kg) Dextrine Malt (2 °L)
  • After Boil
  • 1 lbs (0.45 kg) Beet Sugar (0 °L)
  • 4 lbs (1.81 kg) Pilsen Dry Malt Extract (2 °L)
  • Hops
  • 1 oz (28.35 g) Styrian Goldings Pellet 5.7% AA (Boil - 60 mins)
  • 0.5 oz (14.17 g) Saaz (Czech) Pellet 3% AA (Boil - 15 mins)
  • Miscellaneous
  • 0.1 oz (2.83 g) Coriander Seed (Boil - 10 mins)
  • 0.1 oz (2.83 g) Candied Ginger (Boil - 10 mins)
  • 0.1 oz (2.83 g) Grains of Paradise (Boil - 10 mins)
  • Yeast
  • Safbrew BE-256 (Dry)

Directions

Steeping Grains (Infusion): Mash at 155 °F (68 °C) with 3 gal (11.36 L) of water for 20 minutes.

Steep grains and remove. Bring to boil and add 3# DME. When boiling follow hops schedule. Add spices and remaining sugars with 10 min boil remaining. Cool, transfer, pitch, ferment.

Hold in primary fermentor for 7 days at 67 °F (19 °C).

Transfer to secondary fermentor for 14 days at 38 °F (3 °C).

Allow to carbonate and age for 21 days at 68 °F (20 °C).
