Ingredients

  • Grains/Fermentables
  • 8 lbs (3.63 kg) 2-Row Malt (2 °L)
  • 1 lbs (0.45 kg) Light Brown Sugar (8 °L)
  • 0.5 lbs (0.23 kg) Crystal 40 (40 °L)
  • Hops
  • 0.5 oz (14.17 g) Calypso Leaf 16% AA (Boil - 60 mins)
  • 0.5 oz (14.17 g) Calypso Leaf 16% AA (Boil - 15 mins)
  • 1 oz (28.35 g) Amarillo Leaf 9.5% AA (Boil - 15 mins)
  • 1 oz (28.35 g) Cascade Leaf 7% AA (Boil - 15 mins)
  • Yeast
  • California Ale Yeast (Whitelabs WLP001) (Liquid)

Directions

mash (Infusion): Mash at 151 °F (66 °C) with 5 gal (18.93 L) of water for 60 minutes.

Recommended Sparge: 160 °F (71 °C)

Hold in primary fermentor for 7 days at 66 °F (19 °C).

Transfer to secondary fermentor for 7 days at 40 °F (4 °C).

Allow to carbonate and age for 7 days at 40 °F (4 °C).
