If the Bacon Bourbon Brown goes well, and we're liking the smoke thing, then this should be fun.

  • Boil Time: 60 mins

Ingredients

  • Grains/Fermentables
  • 7.5 lbs (3.4 kg) Belgian Pilsner 2-Row (2 °L)
  • 2.5 lbs (1.13 kg) Rye malt (3.5 °L)
  • 2.5 lbs (1.13 kg) Smoked Malt (9 °L)
  • 1 lbs (0.45 kg) Crystal 40 (35 °L)
  • 12 oz (340.19 g) Rice Hulls (0 °L)
  • Hops
  • 1 oz (28.35 g) Galena Leaf 14.1% AA (Boil - 60 mins)
  • 0.5 oz (14.17 g) Cascade Leaf 8.5% AA (Boil - 15 mins)
  • 0.5 oz (14.17 g) Belma Leaf 11.6% AA (Boil - 15 mins)
  • 0.5 oz (14.17 g) Calypso Leaf 16% AA (Boil - 15 mins)
  • Yeast
  • Dry English Ale Yeast (Whitelabs WLP007) (Liquid)

Directions

single step (Infusion): Mash at 157 °F (69 °C) with 4.5 gal (17.03 L) of water for 60 minutes.

Recommended Sparge: 168 °F (76 °C)

Stuck mash possible. Sparge hot, but not above 168*.

Hold in primary fermentor for 14 days at 68 °F (20 °C).

Allow to carbonate and age for 14 days at 40 °F (4 °C).
