Ingredients

  • Grains/Fermentables
  • 10 lbs (4.54 kg) Belgian Pilsner 2-Row (2 °L)
  • 4 lbs (1.81 kg) Vienna Malt (4 °L)
  • 9 lbs (4.08 kg) White Wheat (2 °L)
  • 1 lbs (0.45 kg) CaraPils (2 °L)
  • Hops
  • 2 oz (56.7 g) simcoe Pellet 13% AA (Boil - 60 mins)
  • 1 oz (28.35 g) simcoe 13% AA (Boil - 30 mins)
  • 1 oz (28.35 g) Citra 11% AA (Boil - 15 mins)
  • 2 oz (56.7 g) Citra 11% AA (Dry Hop)
  • Miscellaneous
  • 1 oz (28.35 g) Sweet Orange Peel (Secondary)
  • Yeast
  • California Ale Yeast (Whitelabs WLP001) (Liquid)

Directions

Initial Strike at 145 F (Infusion): Mash at 133 °F (56 °C) with 6 gal (22.71 L) of water for 15 minutes.

Remove 24 qt and heat to 170 F then return to mash (Decoction): Mash at 155 °F (68 °C) for 60 minutes.

Recommended Sparge: 180 °F (82 °C)

Hold in primary fermentor for 7 days at 71 °F (22 °C).

Transfer to secondary fermentor for 14 days at 71 °F (22 °C).

Allow to carbonate and age for 7 days at 71 °F (22 °C).
