This recipe is a American-Style Double India Pale Ale (IPA) brewed exclusively with Citra hops.

  • 3 lbs (1.36 kg) Crystal 20 (20 °L)
  • 8 oz (226.8 g) Gambrinus Honey Malt (25 °L)
  • 1 lbs (0.45 kg) CaraPils (2 °L)
  • Hops
  • 1 oz (28.35 g) Citra Pellet 11% AA (Boil - 60 mins)
  • 1 oz (28.35 g) Citra Pellet 11% AA (Boil - 30 mins)
  • 1 oz (28.35 g) Citra Pellet 11% AA (Boil - 15 mins)
  • 1 oz (28.35 g) Citra Pellet 11% AA (Boil - 0 mins)
  • 1.5 oz (42.52 g) Citra Leaf 11% AA (Dry Hop)
  • 0.5 oz (14.17 g) Citra Leaf 11% AA (Dry Hop)
  • 0.5 oz (14.17 g) Citra Leaf 11% AA (Dry Hop)
  • 1 oz (28.35 g) Citra Leaf 11% AA (Dry Hop)

  • 1 tsp (4.93 mL) Irish Moss (Boil - 15 mins)
  • Yeast
  • California Ale Yeast (Whitelabs WLP001) (Liquid)

Directions

saccharification (Infusion): Mash at 150 °F (66 °C) with 4.2 gal (15.9 L) of water for 60 minutes.

Mash-out (Infusion): Mash at 169 °F (76 °C) with 2.2 gal (8.33 L) of water for 5 minutes.

Recommended Sparge: 170 °F (77 °C)

Single infusion mash. Add hops and irish moss at times indicated. Cool and pitch yeast.

Start dry hopping when primary fermentation is complete and racked to secondary fermenter. Add dry hops every 3 days...12 days, 9 days, 6 days, 3 days, then bottle.

Corn sugar is for bottle priming.

Hold in primary fermentor for 7 days at 66 °F (19 °C).

Transfer to secondary fermentor for 14 days.

Allow to carbonate and age for 14 days.
