Scottish-Style Heavy Ale - All Grain
Traquar House Ale clone recipe that I found online. It works great! Second place in homebrew competition and my highest scored beer to date. But most importantly, the wife loves it and the knickers fly after only one glass!
- 14.75 lbs (6.69 kg) Maris Otter (3 °L)
- 5 oz (141.75 g) Roasted Barley (300 °L)
- 0.5 oz (14.17 g) Northern Brewer Leaf 9.1% AA (Boil - 45 mins)
- 0.5 oz (14.17 g) Northern Brewer Leaf 9.1% AA (Boil - 35 mins)
- Safale S-04 (Dry)
Infusion Step: Mash at 155 °F (68 °C) for 90 minutes.
Draw off first gallon of wort and boil the everliving fuck out of it. I'm talking down to less than a pint where that shit is almost liquid malt extract. It shouldn't take more than about 30 minutes which is what the rest of your runoff is going to take anyhow. That's the secret to this brew even though your taste buds are going to think it was some sort or witchcraft or Harry Potter-esque wizardry. If you plan to skip this step, your lame ass might as well not even make this beer to begin with. Pansy.
Hold in primary fermentor for 7 days at 68 °F (20 °C).
Transfer to secondary fermentor for 7 days at 50 °F (10 °C).
Allow to carbonate and age for 7 days at 70 °F (21 °C).
