German-Style Oktoberfest/Wiesen - All Grain

Generic fest bier. Nothing fancy, just good.

  • Boil Size: 6.5 gal (24.6 L)
  • Boil Time: 60 mins

Ingredients

  • Grains/Fermentables
  • 6 lbs (2.72 kg) Vienna Malt (4 °L)
  • 3 lbs (1.36 kg) Munich 10 (10 °L)
  • 2.5 lbs (1.13 kg) German Pilsner 2-Row (2 °L)
  • 1 lbs (0.45 kg) Melanoidin Malt (20 °L)
  • 0.5 lbs (0.23 kg) Gambrinus Honey Malt (25 °L)
  • 0.5 lbs (0.23 kg) CaraMunich (56 °L)
  • 0.5 lbs (0.23 kg) CaraVienna (22 °L)
  • Hops
  • 1.5 oz (42.52 g) Hallertauer Pellet 4.3% AA (Boil - 60 mins)
  • Yeast
  • Saflager S-23 (Dry)

Directions

Infusion Step: Mash at 150 °F (66 °C) for 60 minutes.

Mash in with 1.25 qts/lb at 150 F. Hold for 60 min. Decotion mash out to 170 F.

Hold in primary fermentor for 7 days at 50 °F (10 °C).

Transfer to secondary fermentor for 28 days at 44 °F (7 °C).

Allow to carbonate and age for 7 days at 40 °F (4 °C).
