  • Alcohol by Volume: 3.5 - 18%
  • IBU: 0 - 0
  • Color:   2 -   30 SRM
  • Original Gravity: 1.035 - 1.170
  • Final Gravity: 0.990 - 1.050

Pyment is a special category of melomel or fruit mead which is made with grapes. Either red or white grapes may be used. If additional spices or additives are used then this would be categorized as a Hippocras or spiced Pyment instead. The strength can vary (hydromel, standard, sack) as well as the overall sweetness (dry, semi-sweet, sweet). They can be both sparkling, petillant (low-carbonation) or still. Grape character should be present but not overpowering.
