Traditional (or Show) Sweet Mead

Traditional mead is made with honey, water and yeast with no additional ingredients. Color and overall flavor will depend largely on the type of honey used (orange blossom, wildflower, buckwheat, avocado, palmetto, etc). They can be both sparkling, petillant (low-carbonation) or still. Mead strength is typically broken into three categories: hydromel, standard, sack. Hydromel meads are low gravity typically 3.5 - 7.5% alcohol by volume. Standard meads are moderate gravity between 7.5 – 14% alcohol by volume. Sack strength meads are the highest at 14 – 18% alcohol by volume. Sweet mead refers to the final gravity of the mead. Sweet meads have a high final gravity (1.025 – 1.050) giving them the most sweetness of the traditional meads much like a dessert wine.
