Notes From Sept. 5, 2011 (Brewing)

Gravity Reading: 1.048

Smelled fantastic while we boiled, very sweet malty scent. Added 1 liter yeast starter and then 1/3 gallon water to top up to 5 gallons. Wort was 80 degrees at yeast pitching. Fermentation started quickly, bubbling nicely at an hour, after several hours very violent fermentation and lots of blowoff, almost looks like it is boiling in the carboy.

Checked the carboy. This is still bubbling fairly regularly, so I'm going to leave it another week to make sure we get the full fermentation, before I rack to secondary.

Notes From Sept. 24, 2011 (Moving to Secondary)

Gravity Reading: 1.014

Moved to Secondary tonight. Tasting good! The color is beautiful. Very little yeast/sediment was siphoned through. Can't wait to try this one cold and carbonated. This one is coming along exactly as the recipe had described, no hitches.

Notes From Oct. 2, 2011 (Bottling/Kegging)

Gravity Reading: 1.013

Bottled last night with Cameron. 4 oz of Corn sugar for priming. Everything exactly as we expected, nice flavor. Got 45 bottles out of it.
