Gravity Reading: 1.051
Wort has a nice dark color. Rehydrated yeast for ~45 minutes in water and wort to ensure viability of yeast.
Notes From Jan. 30, 2013 (Moving to Secondary)
Gravity Reading: 1.030
Yeast is probably working slower due to this being one of the coldest weeks this winter and the fermenter was sitting on a floor above an uninsulated crawl space instead of on a floor directly on the slab.
Carboy has been put in a warmer room and will stay there until gravity is below 1.02.

Gravity Reading: 1.019
The yeast was working a bit slower than I had hoped. The vanilla flavoring was subtle and about as intense as I wanted it. Giving the yeast more time to push the gravity down probably would have made the vanilla flavor too pronounced. I opted to bottle now with a lower alcohol percent for the sake of a more desirable flavor.
