Final Review

This is good, and I'm hoping that a bunch of time in the bottle will help smooth things out. Not necessarily something I'd do again, but I'd like to try something similar.

Taste Notes

A dessert beer. Strong and sweet, definite chocolate taste, zero vanilla taste. A slight aftertaste that isn't unpleasant, but isn't pleasant either.

Notes From Aug. 21, 2011 (Brewing)

Gravity Reading: 1.092

Not sure if I scorched the chocolate a little.
After 4 hours, the airlock was bubbling about once a second, after 14 hours, it was bubbling 2-3 times per second. Very vigorous.

Notes From Sept. 4, 2011 (Moving to Secondary)

Gravity Reading: 1.032

Racked to secondary on 09/04/2011, sampled it, actually tasting pretty good. Couldn't pick up the vanilla flavor, but the chocolate was present and it had a slight coffee taste to it as well.

Notes From Sept. 18, 2011 (Bottling/Kegging)

Gravity Reading: 1.032

Gravity didn't change while in Secondary. I suspect it is due to the inferior, old dry yeast that I used. Definite chocolate tones to the beer, no hint of vanilla. 5 oz priming sugar, bottled, placed in the basement. Due to it still being a high gravity, it is pretty sweet. I'm expecting to have to let this condition for some time to bring out it's best flavor. Still a drinkable beer, and high alcohol, but probably won't end up being a favorite as brewed. I look forward to making something similar with some better yeast and some other tweaks.

Had the first bottle last night. This is a strong heavy beer, but it's actually pretty good! VERY heavy chocolate flavor, no vanilla flavor at all. Rename this to Chocolate Porter. Did carbonate in the bottle, looking forward to letting this one age for a while.
