Final Review

This was a completely over simplified Kolsch recipe. I didn't do any cold conditioning and used some leftover hops instead of more traditional ones. I don't normally drink a lot of Kolsch beers but still it made a tasty beer.

Taste Notes

The goal was to a make a light wheaty beer and it has that character. It seems a little under-carbonated but it has a crisp taste.

Notes From July 31, 2011 (Brewing)

Gravity Reading: 1.052

No real surprises in the brewing. The mash had a nice biscuit smell. Gravity reading came out right as expected.

Notes From Aug. 7, 2011 (Moving to Secondary)

Gravity Reading: 1.012

Glad I had a full blow-off assembly because the yeast was very active. Even with that it bubbled out and made a small mess. Between the mess and leaving the trub it looks like I lost a quarter to half a gallon from the original 5 gallons. I took a small taste and it had a slight sweet taste. Gravity was lower than I expected.

Notes From Aug. 21, 2011 (Bottling/Kegging)

Gravity Reading: 1.012

No gravity change from the last reading. It has a pale yellow color and nice fruity smell.
