Final Review

This turned out really nice this year. The peppermint last year was a little overwhelming at times but this has much better balance. Shared with family, friends and co-workers all with positive comments. This is becoming one of my favorite beers to make.

Taste Notes

Nice smell and taste of peppermint. The chocolate is subtle but adds a rich flavor and nice bitterness to balance the cool peppermint.

Notes From Nov. 11, 2011 (Brewing)

Gravity Reading: 1.054

I added a little too much water for the initial boil so I didn't boil too aggressively since I didn't want to make a mess of my stove. Combining that with the water added to mix the chocolate it was a precarious boil. Other than that everything seemed to go well.

Notes From Nov. 20, 2011 (Other)

Gravity Reading: 1.020

Added the peppermint extract today and took a gravity reading and a taste. I tasted from the hydrometer which didn't include the peppermint. The bitterness of the dark chocolate is there without being unpleasant. Fermentation was only really active for a few days. We'll see if the gravity comes down anymore or if it's already finished out.

Notes From Nov. 30, 2011 (Bottling/Kegging)

Gravity Reading: 1.020

Bottled up a little late because I was out of town for Thanksgiving. The peppermint smell was very strong and it tastes great. Not as much chocolate as I remember from last year but still very good. No real change on the gravity from the last reading.
