Notes From Sept. 19, 2011 (Brewing)
Gravity Reading: 1.058
This brew went well. I created a starter for the yeast 24 hours in advance using priming sugar rather than the recommended DME and there really wasn't any activity. The fermentation didn't start in the primary for more than 15 hours, a really slow start in my experience with the liquid yeast and starters. I was worried about the slow start, but after about 18 hours, it was foaming and fermenting quite violently, so I feel better about it. Also, since this was an Extra Pale Ale, I did zero straining of the hops when adding to the primary, there is quite a bit of sediment at the bottom of the carboy.

Gravity Reading: [Not given]
It has been almost 6 days now and it is still roiling inside like crazy and lots of fresh foam at the top. It smells FANTASTIC! Still have to wait until most of the fermenting is done to dry hop it, but I'm excited for this one.
Notes From Oct. 2, 2011 (Moving to Secondary)
Gravity Reading: 1.017
Racked to secondary. This is tasting fantastic so far. Added the 2 oz of hops to the secondary. There was a ton of sediment at the bottom of the primary, so quite a bit got sucked into the secondary, but that should clear out 100% when we go to bottling.
Notes From Oct. 13, 2011 (Bottling/Kegging)
Gravity Reading: 1.015
Bottled. 42 bottles. Tastes great! 4 oz of corn sugar for priming. A little of the dry hopped hops got into the bottling bucket, but that should all settle if any got in the bottles once they condition and are in the fridge. FG of 1.014 at 72 degrees (adjusted for temp: 1.0154) which gives us an ABV of around 5.64%.
